Mark Moriarty's Beef Koftas with Halloumi, Pickled Veg and Bulgur Wheat Salad


  • Bulgur wheat
  • Quinoa  
  • White wine vinegar
  • Spices: Chilli, Cumin
  • Sausage meat
  • Garlic 
  • Mince beef
  • 2 Wraps
  • Hummus 
  • Halloumi
  • For the slaw topping dressing: grated tomato, onion, carrots, salt and pepper


  1. Start by cooking the bulgur wheat and quinoa as per package instructions.
  2. Place the beef and the sausage meat into a bowl with the garlic, cumin, chilli, salt, and black pepper.  Once mixed, form the meat into three kofta or sausage shapes. 
  3. Heat a griddle pan until hot, add the 3 koftas and cook for 2-3 minutes on each side
  4. Remove then add the halloumi and cook on each side for 1 minute
  5. In a separate bowl, cut and add all pickled vegetables, along with vinegar mixture
  6. Once the bulgur wheat is cooked, separate the grains and fluff with a fork and mix in the quinoa to make a salad. 
  7. Line a wrap with hummus, layer on the beef koftas, followed by the fried halloumi, the bulgur mix and drizzle over  the vegetable salad to serve!
