This recipe works with a variety of vegetables like peppers, onions, mushrooms, courgette, broccoli etc. and you can use beef instead of chicken. This can be prepared the night before and kept in the fridge for when you are ready to pop in the air-fryer for dinner; or can be made and reheated the next day. If you don’t have an air-fryer, just fry the chicken and veg in a pan instead.
For 4 people as a main meal
4 chicken fillets
2 peppers (any colour) - sliced
2 onions – sliced
Cajun seasoning
Chilli flakes
(or use a fajita packet mix instead)
Garlic granules
Salt and Pepper
Olive Oil
8 tortilla wraps
Toppings: (optional)
Grated cheddar cheese
Salsa
Sour cream/crème fraiche/natural yoghurt
Guacamole (or make your own using avocado, tomatoes, chilli flakes, and lime juice)
