The recipe is a great way to use up stale bread and works with a variety of vegetables. It can be served warm fresh from the oven, or eaten cold or reheated the next day.
For 6 people as a main meal
400g of bread – anything from sliced pan to crusty loaf will do
600ml milk
2 eggs
1 onion or 4 scallions or 1⁄2 leek – chopped
Any combination of the following vegetables
6-8 mushrooms sliced
1 pepper chopped
3-4 tomatoes chopped
1 cup of frozen peas
