For 4 people as a main meal
4 chicken fillets
2 peppers (any colour) - sliced
2 onions – sliced
Cajun seasoning
Chilli flakes (or use a fajita packet mix instead)
Garlic granules
Salt and Pepper
Olive Oil
8 tortilla wraps
Toppings (optional)
Grated cheddar cheese
Salsa
Sour cream/crème fraiche/natural yoghurt
Guacamole (or make your own using avocado, tomatoes, chilli flakes, and lime juice)
Chop the raw chicken into thin strips and place in a large bowl.
Slice the peppers and onions (or whatever vegetables you have) and add them to the bowl too.
Add 1 tbsp Cajun seasoning, 1 tsp chilli flakes, 1 tsp garlic granules (or use a fajita seasoning packet mix if you prefer), salt and pepper to the bowl and mix.
Toss with a drizzle of olive oil.
Cook in the air-fryer for 15 mins at 190oC or cover and place in the fridge for later.
Stir halfway through cooking and make sure the chicken is cooked through at the end.
Serve in wraps with your choice of toppings.
Leftovers should be stored in the fridge (once cooled) and will keep for 2-3 days. Reheat in the microwave.
