- Fry onions for 4-5 minutes, stirring regularly to avoid burning.
- Add chopped garlic cloves and continue to fry for 2 minutes.
- Add tinned tomatoes and chopped tomatoes and/or red peppers and any other vegetables you are using.
- Continue to simmer to reduce volume by one third (could take 10 minutes).
- Once cooked, liquidise until smooth.
To serve
Ideal to serve with pasta or on top of a baked potato with some grated cheese.
Optional ingredients to add to dish:
- Roasted vegetables e.g. aubergine, courgettes (vegan)
- Sausages/chorizo
- Grilled rashers or cooked ham
- Cooked chicken (or any leftover cooked meat)
- A tin of tuna or salmon
