Beef koftas with Halloumi, pickled veg and bulgur wheat salad

Ingredients

Bulgar wheat

Quinoa  

White wine vinegar

Spices: chilli, cumin

Sausage meat

Garlic 

Mince beef

2 wraps

Hummus 

Halloumi

For the slaw topping dressing: grated tomato, onion, carrots, salt and pepper

Method

Start by cook the bulgur wheat in a heatproof bowl with water for approx 15- 20 minutes, or until all water is absorbed

Place the beef and the sausage meat into a bowl with the garlic, cumin, chilli, salt, and black pepper.  Once mixed, form the meat into three kofta or sausage shapes. 

Heat a griddle pan until hot, add the 3 koftas and cook for 2-3 minutes on each side

Remove then add the halloumi and cook on each side for 1 minute

In a separate bowl, cut and add all pickled vegetables, along with vinegar mixture

Once the bulgar wheat is cooked, separate the grains and fluff with a fork and mix in the quinoa to make a salad. 

Line a wrap with hummus, layer on the beef koftas, followed by the fried halloumi, the bulgar mix and drizzle over  the vegetable salad to serve!
