Fridge clear out muffins

A great way to use up any left-over fruit or veg like carrot, courgette, sweet potato, grapes, avocado, spinach, or blueberries. These muffins are perfect mid-morning snacks and ideal for lunchboxes!

120ml  milk

1 large egg or 2 small eggs

75ml olive oil / other flavourlessoil

50g Sugar

120g self-raising flour

75g wholemeal flour

45g oats

Half teaspoon salt

2 cups left-over fruit and veg(e.g. 3 small grated carrots, handful blueberries, handful grapes, half courgette grated

Method

Preheat the oven to 200°C.

Mix all ingredients together, leaving the fruit and veg until last. Fold gently.

Divide mixture into muffin tin and sprinkle some oats on each muffin.

Bake for 5 mins and then turn down to 170°Cand bake for further 18-20 mins until golden.

Tips

Use wholemeal or oat flour to boost the fibre in this recipe.
