Mini Frozen Yoghurt Parfaits

These parfaits are easy to make, a great way to use up extra yoghurt and fruit, and are a delicious on- the-go breakfast option. Endless combinations of yoghurt flavours, fruits and toppings can be created!

Ingredients

Yoghurt – any flavour of choice.

Fruit e.g. chopped banana or berries.

Granola

Method

Chop fruit into small pieces.

Pour yoghurt into an ice-cube tray. Leave a little space on top. (A silicone cupcake tray can be used to make larger portions).

Add a couple of pieces of fruit to each cube or cupcake slot.

Sprinkle with granola.

Freeze until Frozen – for at least four hours.

Tips!

  • Sprinkle nuts or seeds on top to increase healthy fats and fibre.
  • Choose natural yoghurt to reduce the sugar content.
